It is a typical course for Christmas. Many families in our region have thistle at Christmas Eve.

Ingredienti
1, 5 K. Thistle (already cleaned)
Olive oil.
1 l. Milk.
Salt.
3 spoons of Flour.
2 cloves of garlic
40 g. of almonds
Preparazione
1.- Clean and cut the thistle in small pieces ( 7x3 cm) and boil with salt until tender. Then drain it.
2.– Make a béchamel sauce ( fry a garlic, add some flour and milk. Stir them until getting a thick cream. Add salt and nutmeg). You can add some almonds ( into pieces) if you like.
3.- Mix all the ingredients in a pan and
boil them for 5 minutes.
4.– Eat hot
Storia
The thistle is a winter vegetable, eaten fresh throughout this period and therefore. Usually it is eaten at Christmas Eve or Christmas Day for lunch. This vegetable must be covered or tied with newspapers and it´s also good if the fields have been ice up (then it will be more tender).
