Storia
During the Middle Age, having meat on Fridays and at Lent time was forbidden by the Christian Church. So people at the seaside had fish instead of meat, and those from the interior of the country, like the Riojan people, had products from their fields.Little by little, the consumption of fish increased in the whole country. Cod was the most important kind of fish at this time because it could be dried up and salted for a better conservation and transportation. This way, Riojan people could buy dry salt cod and have it in combination with their field products, like tomatoes, onions, garlic and red peppers.
